Ingredients:
- 1 package Kevin's Choice Sunchang Meju Fed Eel (makes 2 portions)
- 2 cups short-grain white rice
- 2 ½ cups water
- 4 eggs
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon sugar
- 2 teaspoons Kevin's Choice premium sesame oil
- 1 tablespoon sesame seeds
- Optional: sliced green onions for garnish
Instructions:
- Prepare the Rice:
- Rinse the rice under cold water until the water runs clear.
- Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions. If using a pot, bring the water to a boil, reduce to a simmer, cover, and cook for 18-20 minutes or until the water is absorbed.
- Prepare the Eel:
- Follow the package instructions to heat the Sunchang Meju Fed Eel. Typically, you can heat it in the oven or microwave until warm.
- Make the Sauce:
- In a small saucepan, combine soy sauce, mirin, sugar, and sesame oil. Heat over medium heat, stirring until the sugar is dissolved and the sauce is slightly thickened.
- Cook the Eggs:
- Beat the eggs and pour them into a heated pan. As the eggs cook, gently roll them to form an omelet shape. Remove from heat and cut into portions.
- Assemble the Unagi Don:
- Divide the cooked rice into two bowls.
- Place a portion of the omelet over the rice in each bowl.
- Place the heated eel on top of the omelet.
- Drizzle the prepared sauce over the eel and rice.
- Garnish with sesame seeds and sliced green onions, if desired.
