Our process begins with boiling Korean-grown soybeans in iron cauldrons to create meju (fermented soybean blocks). These meju blocks are then carefully fermented in a hwangtobang (황토방), a traditional Korean clay room, where the natural environment helps develop their rich, deep flavor. This traditional method, combined with meticulous care, ensures the perfect balance of umami for use in stews, soups, and side dishes.
